Classic Pain de Mie Recipe
Makes 1 large Pullman loaf
Ingredients:
- 3¾ cups (480g) bread flour
- 2 tablespoons (25g) granulated sugar
- 2 teaspoons (12g) salt
- 2¼ teaspoons (7g) instant yeast
- 3 tablespoons (42g) unsalted butter, softened
- 1¼ cups (300ml) whole milk, lukewarm
- ¼ cup (60ml) water, lukewarm
Instructions:
- In a large bowl or stand mixer, combine flour, sugar, salt, and yeast.
- Add softened butter, milk, and water. Mix until a soft dough forms.
- Knead for 8-10 minutes by hand or 5-7 minutes in a stand mixer until smooth and elastic.
- Place dough in a greased bowl, cover, and let rise until doubled, about 1-1½ hours.
- Lightly grease your USA Pan Pullman loaf pan.
- Punch down dough and shape into a log. Place in pan, cover loosely, and let rise until dough reaches about ½ inch below the rim, about 45-60 minutes.
- Preheat oven to 350°F. Slide the lid onto the pan.
- Bake for 40-45 minutes until golden and internal temperature reaches 190°F.
- Remove from oven, slide off lid, and turn loaf out onto a cooling rack immediately.
