Classic Pain de Mie Recipe

Makes 1 large Pullman loaf

Ingredients:

  • 3¾ cups (480g) bread flour
  • 2 tablespoons (25g) granulated sugar
  • 2 teaspoons (12g) salt
  • 2¼ teaspoons (7g) instant yeast
  • 3 tablespoons (42g) unsalted butter, softened
  • 1¼ cups (300ml) whole milk, lukewarm
  • ¼ cup (60ml) water, lukewarm

Instructions:

  1. In a large bowl or stand mixer, combine flour, sugar, salt, and yeast.
  2. Add softened butter, milk, and water. Mix until a soft dough forms.
  3. Knead for 8-10 minutes by hand or 5-7 minutes in a stand mixer until smooth and elastic.
  4. Place dough in a greased bowl, cover, and let rise until doubled, about 1-1½ hours.
  5. Lightly grease your USA Pan Pullman loaf pan.
  6. Punch down dough and shape into a log. Place in pan, cover loosely, and let rise until dough reaches about ½ inch below the rim, about 45-60 minutes.
  7. Preheat oven to 350°F. Slide the lid onto the pan.
  8. Bake for 40-45 minutes until golden and internal temperature reaches 190°F.
  9. Remove from oven, slide off lid, and turn loaf out onto a cooling rack immediately.
  10. Cool completely before slicing for perfect sandwich bread!
